Mushroom Salad with Mustard Vinaigrette
List of Ingredients
1/4 C. Dijon mustard
1/4 C. wine vinegar
1/2 tsp. oregano, crushed
1/2 tsp. tarragon
1/4 tsp. pepper
1/2 C. olive oil
12 oz. mushrooms, sliced
1/2 C. pitted black olives
1/4 tsp. salt
Tomato slices, optionalRecipe
Combine mustard, vinegar, oregano, tarragon, salt and pepper. Using wire whisk, blend in oil. Stir in mushrooms and olives. Cover and chill at least 2 hours before serving.
