    Clam Chowder

    List of Ingredients




    2 Onions, sliced
    4 potatoes, cubed
    5 carrots, sliced
    1 can diced or crushed tomatoes
    4 slices bacon
    4 T. flour
    2 T. butter
    2 cans clams or 2 doz. fresh clams, chopped
    Salt to taste
    Thyme

    Recipe



    Put onions, carrots, potatoes, tomatoes, thyme and salt in 3 quarts of water. Cook until tender. Fry bacon and drain. Make brown flour (roux - melt butter, add flour, fry until flour is brown in color on high heat). Add brown flour and clams and only let come to a boil.
