    This is the way my next-door neighbor made roasted peppers. She passed away last year at age 89. Thanks for the recipe. :o)

    List of Ingredients




    8 peppers
    Olive oil
    2 large cloves garlic, minced finely

    Cut of stems of peppers even wit the top. Place peppers in and OLD frying pan under HIGH heat and brown quickly, cooking until skins are almost black (I found a cast iron frying pan worked the best and cleaned the easiest with the least amount of damage). You must cook all sides, top and bottom. After they are cooked, place peppers in a brown paper bag, seal the bag tightly and let peppers cool. When cool, peel off all the blackened skin. Cut into long, thin slices, removing seeds as you go along. Add garlic and enough olive oil to just coat peppers, not cover them. Let stand, refrigerated, for 24 hours before eating.
