My friend Beverly, who is from the island of Jamaica, gave me this recipe many years ago. It was her mother's.
List of Ingredients
2 1/2 C. white rice
1 can pigeon peas
4 slices slab bacon
1 medium onion, chopped
1 can coconut cream
Crushed red pepper*
Allspice*
Thyme*
Salt and pepper*
* To taste
Recipe
Saute bacon and onion until onions are pearly. Add coconut cream, peas, including juice, and spices. Add 2 cans of water from the peas, one can of water from coconut cream. Add rice. Cook on low heat until all liquid is absorbed.
