Southern Sweet Potato Pie

This is great year-round, but especially during the holidays.
List of Ingredients
1 9- or 10-inch frozen vegetable shortening pie shell
1 pound sweet potatoes, peeled, and cut in chunks
2 large eggs
1/2 cup sugar
1 1/2 cups cream or evaporated milk
2 tablespoons butter, melted
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/8 teaspoon cloves
Preheat oven to 425( F. Prick the bottom of the pie crust with a fork several times. Line crust with foil and fill with rice or beans; bake on bottom shelf of oven for 10 minutes. Remove foil and weights and bake 8 more minutes, or until crust begins to brown slightly. Remove and cool. Lower oven to 400(F. While the crust is baking, boil sweet potato chunks in water until very tender, 10-15 minutes. Mash well and set aside. In a medium bowl, whisk
together eggs; add mashed potatoes and beat well. Beat in sugar, cream, butter, salt, and spices until smooth. Pour mixture into cooled crust and set on middle shelf of oven. Bake 40 to 50 minutes, turning at least once during baking. Pie should be removed when the edges of the filling are firm, but the center still jiggles a little. Cool on a rack before serving. *If edges of crust begin to get dark before the filling is done, cover with a strip of
foil and continue baking.
Makes one 9- or 10-inch pie.
