    Betty Crocker's Slow Cooker Meals

    Beef and Potatoes with Rosemary

    -------- ------------ --------------------------------
    1 pound baby red potatoes -- cut into fourths
    1 cup baby carrots
    3 pounds boneless chuck roast
    1 1/2 teaspoons rosemary
    1/2 teaspoon thyme
    1 teaspoon salt
    1/2 teaspoon pepper
    3 tablespoons dijon mustard
    1 small onion -- finely chopped
    1 1/2 cups beef broth
    Place carrots and potatoes around the bottom of the slow cooker. Combine mustard, rosemary, thyme, salt and pepper and spread evenly on the beef. Place meat on top of veggies, top with onions and pour broth over all. Cook on low 8-9 hours.
