SHIRLEY'S MEAT LOAF

This isn't a favorite of mine from childhood, my mothers meatloaf was, well let's just say, not very good. I got this recipe from a friend named Shirley (hence the name of the meatloaf) years ago. It has become one of our most favorite meals. Shirley's Meatloaf, Mashed Potatoes and corn.

Amount Measure Ingredient -- Preparation Method

1 lb ground beef
1 egg
2 slices bread -- crumbled
2 tbls ketchup
1 med onion -- chopped
salt and pepper
BROTH FOR MEAT
1/2 cup ketchup
1 cup water
1/2 tsp mustard
2 tbsp vinegar
2 tbsp brown sugar
Pour broth over meat loaf in cooking bag. Secure bag and punch a couple of holes in it for the steam to escape. Bake at 350 for 1 hours.

NOTES : This is the original recipe that I received from Shirley Merson, a friend that I worked with 30 + years ago. I have changed it slightly since then. I use Italian Seasoned Bread Crumbs instead of the bread slices. I have also made this with half beef and half pork. You can make any meatloaf recipe that you want and just pour the broth over it. Comes out great everytime.
