    Rustic Chicken Stew


    Amount Measure Ingredient -- Preparation Method

    2 pounds boneless skinless chicken breasts -- cut in 1" cubes
    3 medium onion -- quartered
    2 medium carrot -- cut in 1" slices
    2 large potato -- cut in 1" cubes
    2 cans fat-free chicken broth -- (14 oz)
    1 teaspoon celery seed
    1 teaspoon dried thyme
    1/2 teaspoon pepper
    1 package mushrooms, whole -- (8 oz) halved
    1 cup frozen corn
    1 cup frozen peas

    Combine chicken, onions, carrots, potatoes, and broth in crockpot. Stir in celery seed, thyme, pepper, mushrooms and corn. Cover and cook on LOW until chicken is done and vegetables we tender, about 7-9 hours. Or HIGH 4-6 hours. Stir in peas and cook another 15-30 minutes.
