CARROT SALAD (KIDS LOVE THIS!)
1 pound carrots, peeled and grated
1/2 cup raisins
1/3 cup mayonnaise, or to taste
1 tablespoon granulated sugar, to taste
1/2 teaspoon salt
black pepper, to taste
Put grated carrots in a large bowl; toss with remaining ingredients. Chill thoroughly before serving.

GLAZED CARROTS
INGREDIENTS:
4 medium carrots
2 tablespoons butter
2 tablespoons sugar
mint or thyme (REPLACE WITH ORANGE ZEST FOR SOMETHING DIFFERENT)
Wash and scrape carrots. Cook in boiling salted water until tender. Drain. Cut in slices. Melt butter. Add sugar. Add carrots. Cook until slightly browned and glazed. Add a teaspoon of chopped fresh mint leaves or thyme to the butter and sugar mixture, if desired.

GINGER CARROTS
6 Medium carrots, 1" pieces
1 Tb Sugar
1 tsp Cornstarch
1/8 t Ground nutmeg
1/4 t Ground ginger
1/4 c Orange juice
1 Tb Butter
Steam carrots just until tender; drain. While carrots are cooking, combine sugar, cornstarch, nutmeg and ginger in a small saucepan; add orange juice. Cook over medium heat, stirring constantly, until sauce thickens. Cook 1 min, then remove from heat and stir in butter
Place carrots in a serving dish, pour sauce over them, tossing to coat evenly. Cover and let stand 4 to 5 min before serving.
