Candied Orange Peels (Midaeval France)

This recipie is somewhat involved. You start by peeling your oranges, and scraping out the white part (take it slowly--this can be tricky to do without tearing the peel). Find a covered container you don't plan to use for the next 9 days, and put the orange peels in it. Cover them with water, and let them soak for 9 days. Be certain to change the water every day. This is to leach out any bitterness in the peels. After the 9 days are through, you drain the orange peels and put them in a saucepan, adding enough honey so that the orange peels are covered (about an inch or so). Bring to a gentle boil, until the honey reaches the "soft ball" stage and the orange peels start to turn transluscent. Remove the saucepan from the stove and skim off any scum that has risen to the top. Put the peels in another covered container (glass is preferable), layering them with powdered ginger. Store for 3 weeks before eating. :-)
