    Quickie Quesadillas

    This is good if you don't have a lot of time to prepare a meal, or if you just want something on the lighter side!


    List of Ingredients


    • 1 or 2 flour tortilas (personal preference)
    • your favorite cheese
    • Chili powder (optional)
    • Diced sweet red/green/yellow peppers (optional)


    Instructions


    1. If you want a folded quesadilla, just use 1 tortilla. If you want a large, round quesadilla, use 2 tortillas.
    2. Put one tortilla on a microwave-safe plate. Slice your cheese NO MORE THAN 1/4" thick if it's in brick/wheel form (you can layer it on the tortilla if you want more cheese). If it's shredded cheese, sprinkle liberally on the tortilla. Be sure that if you plan to have a folded tortilla that you only do this to 1/2 of it. If you're making a large quesadilla, cover the bottom part with the remaining tortilla after you've put the cheese on the first one.
    3. Put the plate with the quesadilla into the microwave for about 30 seconds. Times may vary, but just remember the cheese will melt very quickly (especially the shredded kind), and you don't want to risk burning.
    4. Remove the plate from the microwave and let stand a minute or two to cool. Enjoy!


    Final Comments


    Interesting variations include sprinkling chili powder on the cheese, adding shredded/sliced chicken, or diced peppers! This recipie is great for kids, especially if Mom or Dad prepare some of the ingredients (like peppers) beforehand!
