    "Cheater" Chicken Alfredo

    Recipe Introduction


    I came up with this recipie when I botched a pizza crust, and nothing else in the house was too appealing! :-) See? Necessity IS the mother of invention!


    List of Ingredients


    • 1 (14.5 ounce) can of cream of mushroom soup, condensed
    • milk
    • 1 (4 ounce) can of mushroom pieces
    • 3 boneless, skinless chicken breasts
    • White cooking wine
    • Your favorite pasta


    Instructions


    1. Set your broiler temperature to HIGH. Wash the chicken breasts and pat them dry.

    2. Place the chicken breasts in the pan you plan to use for broiling them (cake and lasagna pans are good for this), and pour just enough white cooking wine into the bottom of the pan where it just covers the bottom. If that flavor proves too strong for you, you can dilute the cooking wine with a little water.

    3. Put your chicken under the broiler, leaving the oven door open a little bit. Cook until no pink remains in the center (this should take about 20-25 minutes... times may vary)

    4. Take out a large pot and fill it with water. Cook your chosen pasta according to package directions.

    5. While the chicken breasts are cooking, take out a medium-sized saucepan, and put in the condensed cream-of-mushroom soup. Save the can, measure out 1/2 can of milk, and stir into the soup until smooth (don't worry--it's supposed to be a little thick). Drain the mushroom pieces and add. Turn the temperature settings to "medium" until you just begin to see steam rise from the sauce, then bring it down to "low". Leave uncovered so the sauce can thicken further. Stir occasionally to prevent burning.

    6. When the chicken is fully cooked, turn off the broiler and remove the chicken from the oven. Cut it into 1/2" cubes, and add it to the sauce. Stir until all pieces are coated.

    7. Serve the sauce on pasta, and ENJOY! :-)

    **CAVEAT** --This dish is VERY filling!
