Cream of Potato Soup
A recipe my mother used during the depression years. It brings back many memories of cold winter nights and hot soup with the family gathered around.
List of Ingredients
- 2 medium sized potatoes peeled and cut into thick slices
- 1/3 onion, chopped
- 2 or 3 green onions with tops, chopped
- 1 hard boiled egg
- 1 cup condensed milk
- 3/4 cup water or thin milk
- 1 tablespoon butter
- Salt and Pepper
- Chedder cheese
Instructions
- In a heavy saucepan put the potatoes and chopped onions. Cover with enough water to about 1 inch over them. Bring to a boil, then simmer until soft. Mash well while in water.
- Add 1 cup condensed milk and water or milk. Season to taste with salt and pepper. Add about 1 tablespoon butter. Heat until steaming hot but not boiling.
- Peel and cut egg into soup just before serving.
- Crumble cheese into bowls and when soup is hot but not boiling, serve.
