HERBED MEAT LOAF

Handed down from my Grandmother
Recipe Introduction
This is a favourite in our house, and has been for at least four generations. It's original source is unknown, just that my Grandmother used to make it.
List of Ingredients
- 1 kg sausage mince
- 60g butter
- 1 onion chopped
- 2 bacon rashers chopped
- 2 tsps mixed herbs
- 2 cups stale breadcrumbs
- 2 tablespoons chopped parsley (optional)
Instructions
- Flour hands and pat the mince ihnto a 25cm square on a sheet of foil or baking paper.
- Fry onion and bacon in butter until onion is soft, remove from heat and add the herbs, breadcrumbs and parsley.
- Place this mixture down the centre of the square of mince.
- Fold over one side of the meat, then overlap with the other side, using the foil or baking paper to help fold it.
- Place seam sie down in a baking dish, brush with a small amount of oil, and bake in a moderate oven for approximately 1 hour.
- Serve hot or cold.
Final Comments
Lovely either hot with gravy and hot veges, or cold with a crisp salad.
