    Everybody loves these things!


    List of Ingredients


    • 2 large unpeeled baking potatoes (about 1 1/4 lbs)
    • vegetable oil
    • 1 cup shredded cheddar or Co-Jack cheese
    • 6 bacon slices, crisply cooked, drained and crumbled
    • 1/3 cup green onion slices
    • 1/4 cup barbecue sauce


    Instructions


    1. Preheat oven to 450. Cut potatoes into 1/4-inch thick slices (with crinkle cutter, if you have one).
    2. Generously spray both sides of potato slices with oil; place on baking stone. Bake 20 minutes or until lightly browned; remove from oven.
    3. In small bowl, combine cheese, bacon and green onion.
    4. With a pastry brush, generously brush potato slices with barbecue sause; sprinkle with cheese mixture.
    5. Return potato slices to oven. Bake 3-5 minutes or until cheese is melted.


    Final Comments


    Makes 24 rounds.
