- 2 tablespoons butter, divided
- 2 scallions, finely chopped
- 3 medium mushrooms, thinly sliced
- 2 eggs
- 1/8 teaspoon salt
Instructions
- Heat 1 tablespoon butter in a skillet; saute the scallions until soft but not browned, about 3 minutes. Add the mushrooms.
- Using a fork, beat the eggs and salt in a bowl until mixed.
- Heat 1 tablespoon of butter in a 7 1/2-inch omelette pan over moderate heat. When the butter bubbles, add the eggs, stirring them with a fork until the eggs separate into soft curds.
- Spoon the filling over half the eggs. Slide a spatula under the unfilled half and fold it over to cover the filling. Slide the omelet back to the center of the pan and continue cooking for 1 minute. Tip the pan and slide out the omelet to a warm plate.
