Country Cookin' Potato Patties

List of Ingredients
- 3 medium russet or baking potatoes
- 3 cups shredded mozzarella cheese
- 1/4 cup flour
- 1/2 cup finely sliced smoked turkey or black forest ham (optional)
- 1 medium onion, cut into thin slices, then quartered
- 1 egg
- 3 tbsp chopped fresh parsely
Instructions
- Peel the potatoes and shred them using the large side of a grater. Rinse in water, drain and squeeze dry throroughly in a clean towel.
- In a large bowl, toss together the shredded potatoes, cheese and flour until well blended. Add all remaining ingredients and combine well.
- Heat a mix of butter and oil in a large non-stick skillet. Form potato mixture into thin patties, about 1/4" thick and desired diameter; fry the patties over medium heat, about 5 minutes on each side until cook through and golden.
- Serve immediately with sour cream and salsa.
