List of Ingredients
BRINE
6~cup water
3/4~cup kosher salt
3/4~cup sugar
3~pound Chicken pieces
DRESSING
1/4~cup lemon juice
2~tablespoon red wine vinegar
2 garlic
1~teaspoon dill
1~teaspoon mint
1~teaspoon red pepper flakes
1/2~teaspoon kosher salt
1/3~cup olive oil
1/2~cup feta cheese, crumbled
2-3~tablespoon veg oilRecipe
Combine brine ingredients in lg bowl, stirring until salt and sugar dissolve.
Add chicken to brine and let sit in fridge for 3-4 hours.
Meanwhile, whisk togheter the lemon juice, vinegar, garlic, dill, mint, red pepper and salt.
While whisking, slowly drizzle in olive oil
Stir in feta.
Refrigerate until needed.
Preheat grill.
Remove chicken from brine; do not rinse.
Pat dry iwth paper towels.
Coat both sides of chicken with the veg oil
Turn off center burner and turn other burners to med.
Place chicken over the center burning, close the lid, and cook until 180 (thighs) 170 (breasts) approx
30-50 min, turning every 10 min.
Drumsticks and thighs will take 40-50 min and breast and wing will take 30-40 min.
