    2 1/2~cu flour
    2~teas oon baking soda
    1~teas oon salt
    1~teas oon cinnamon
    2~cu sugar
    1~cu oil
    2~teas oon vanilla
    2 eggs
    2~cu carrots, shredded
    8~oz pineapple, crushed, well drained
    1/2~cu raisins
    1/2~cu nuts, chopped
    FROSTING
    8~oz cream cheese, softened
    2 1/2~cu powdered sugar
    6~tables oon butter, softened
    2~teas oon vanilla
    1~cu coconut
    1/2~cu nuts, chopped

    In med bowI, combine flour, baking soda, salt and cinnamon; mix welI.
    In lg bowI, combine sugar, oiI, 2 tsp vanilla and eggs; beat welI.
    Add flour mixture; mix welI.
    Stir in carrots, pineapple, raisings and 1/2 cup nuts.
    Pour and spread into 13x9 pan.
    Bake for 50-60 min or until cake springs back when touched lightly in centre.
    CooI 1 hour or until combpletely cooled.
    In lg bowI, combine cream cheese, powdered sugar, margarine and 2 tsp vanilla; beat until smooth.
    Stir in coconut and 1/2 cup nuts.
    Spread over cooled cake.
