    Saucy Ground Beef-Topped Potatoes

    List of Ingredients


    • 3 medium baking potaotes
    • 1/2 lb ground beef
    • 2 cups spaghetti sauce
    • 1 (7 0z) can vacuum-packed whole kernel corn, drained
    • 1/4 cup (or more) shreded mozzarella cheese


    Instructions


    1. Pierce potatoes with fork. Place on paper towel in microwave. Microwave on high for 10-13 minutes or until tender. Let stand 3 minutes
    2. Meanwhile, brown ground beef until thoroughly cooked. Drain. Stir in spaghetti sauce and corn. Cover; simmer 4 to 5 minutes or until thoroughly heated, stirring occassionaly.
    3. To serve, cut potatoes in half lengthwise; place on 3 individual plates. Mash potatoes slightly with fork. Top each potato with 2/3 cup beef mixture. Sprinkle with cheese.
