Steaks with Rosquefort Butter

List of Ingredients
4 Steaks
olive oil
black pepper
6~tablespoonButter, room temp
2~oz Roquefort (or blue) cheese
1 garlicRecipe
Bursh steaks with oil and dust liberally with pepper
Preheat grill
In sm bowl, combine butter, cheese and garlic, mixing throroughly with a fork. Set aside until
serving time.
Place steak on grill and close lid.
Sear one side of the steaks, about 2min for 1-inch thick and 4 for 1 1/2 inch steaks.
After searing, turning off the center burner and turn the other burners to med.
Turn the steaks (so searded side is up), placeing them directly over center burner.
Close lid and finish cooking steaks, turning them one more time.
Rare: 4-5 min, Med 5-7 Well-done 7-9
Allow slightly more time for 1 1/2 inch steaks.
Serve hot off the grill with tablespoon or so of cheese butter on top.
