    Ingredient
    1 chicken breast
    1~tablespoon cornstarch
    1~tablespoon soy sauce
    1~teaspoon ginger root
    11~oz Mandarin ornage segments
    2/3~cup Sweet & sour sauce
    2~tablespoon veg oil, divided
    1/2~pound snow peas
    5 green onions, sliced
    1/2~cup cashews

    Recipe



    Cut chicken into 1 inch pieces.
    Combine next 3 ingredients and chicken; let stand 15 minutes.
    Meanwhile, reserving 1/4 cup syrup, drain mandarin oranges.
    Blend reserved syrup with ss sauce; set aside.
    Heat 1 tbsp oil in skillet over med-high heat.
    Add chicken and stir-fry 2 min; remove.
    Heat remaining oil, add snow-peas; stir-fry 1 min.
    Add green onions; stir-fry 30 seconds longer.
    Add chicken, cashews and ss mix; cook, stirring, until all ingredients are coasted in sauce.
    Gently stir in oranges; heat through.
    Serve over rice.
