    Honey-orange chicken stir-fry

    Jay's favourite stir-fry...with less peas!
    1/2 measures equals one perfect meal for 2 (us, anyway).


    List of Ingredients


    • 1 cup uncooked regular long-grain white rice
    • 2 cups water
    • 4 boneless, skinless chick breast halves, cut into thin strips
    • 1/2 tsp salt
    • 1/4 tsp pepper
    • 1 cup orange juice
    • 2 tbsp honey
    • 1 tbsp cornstarch
    • 1 tsp grated orange peel
    • 2 cups frozen sweet peas, thawed
    • 2/3 cup salted cashews


    Instructions


    1. Cook rice in water as directed on package.
    2. Spray lg nonstick skillet or wok with nonstick cooking spray. Heat over medium-high heat until hot. Add chicken, salt and pepper; cook and stir 3-4 minutes or until chicken is no longer pink.
    3. In small bowl, combine orange juice, honey, cornstarch and orange peel; blend well.
    4. Add peas and orange juice mixture to chicken in skillet; cook and stir until mixture thickens and peas are hot. Stir in cashews.
    5. Serve over rice.
