Jay's favourite stir-fry...with less peas!
1/2 measures equals one perfect meal for 2 (us, anyway).
List of Ingredients
- 1 cup uncooked regular long-grain white rice
- 2 cups water
- 4 boneless, skinless chick breast halves, cut into thin strips
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 cup orange juice
- 2 tbsp honey
- 1 tbsp cornstarch
- 1 tsp grated orange peel
- 2 cups frozen sweet peas, thawed
- 2/3 cup salted cashews
Instructions
- Cook rice in water as directed on package.
- Spray lg nonstick skillet or wok with nonstick cooking spray. Heat over medium-high heat until hot. Add chicken, salt and pepper; cook and stir 3-4 minutes or until chicken is no longer pink.
- In small bowl, combine orange juice, honey, cornstarch and orange peel; blend well.
- Add peas and orange juice mixture to chicken in skillet; cook and stir until mixture thickens and peas are hot. Stir in cashews.
- Serve over rice.
