    Low Carb Baked Macaroni and Cheese

    Adam's adaptation of a recipe by Mimi

    Recipe Introduction

    This is a variation of the Ultimate Macaroni & Cheese recipe that our family has enjoyed for years. The only variation here is to use cauliflower instead of pasta, as a low-carb substitute.

    List of Ingredients

    2 (approx. 12 oz.) frozen cauliflower
    1/2 c. butter
    1/2 c. flour
    1-1/2 c. milk
    1-1/2 c. sour cream
    1 t. salt
    1/2 T. pepper
    Approx. 1 to 2 10-oz. bars of cheese (any cheddar based), grated

    Recipe

    1.Preheat oven to 350°F.

    2.Cook cauliflower in microwave until cooked but still firm. DO NOT OVERCOOK. (In my microwave, I cook the two packages separately, for 3 minutes each) Rinse with cold water to stop it from cooking further, and pour into a 3-qt. casserole.

    3.In a saucepan, melt butter and stir in flour. Gradually stir in milk and sour cream. Add salt and pepper.

    4.Cook over low heat, stirring constantly, until sauce bubbles and thickens.

    5.Reserve 1 c. grated cheese for the top of the casserole. Toss cauliflower with remaining cheese.

    6.Pour sauce over cauliflower and mix thoroughly. Sprinkle with reserved cheese.

    7.Bake for 75 minutes, or until bubbly and brown.

    8.Serve immediately.

    Serves 6.
