    Sarah's Banana Bread Muffins

    Recipe Introduction


    A couple variations to the original. These came out extremely moist. Our notes:

    1. We didn't use the walnuts, although I'm sure they would be good with it.

    2. The original recipe called for 1 cup sugar and 3 bananas, but we cut back the sugar and added a 4th banana.

    3. Our over runs hot, so we baked it at a slightly lower temperature.

    List of Ingredients




    3/4 cup white sugar
    1/2 cup vegetable oil
    1 egg
    4 VERY ripe bananas (black is fine), mashed
    1/4 cup chopped walnuts
    2 cups all-purpose flour
    1 teaspoon baking soda
    1/2 teaspoon salt

    Recipe



    1. Preheat oven to 350 degrees F (175 degrees C). Place muffin cups in muffin tin, or grease with a little butter.


    2. Mix sugar, oil, and egg until creamy and light yellow in a bowl. Add bananas and walnuts. Add flour, baking soda, and salt. Stir until completely smooth. Spoon the batter into the muffin tin.

    3. Bake for 30 to 40 minutes, until toothpick poked in center muffin comes out clean.

    Makes one dozen small muffins.
