Recipe Introduction
I don't eat crab so I replaced the original recipe with krab (let the purists riot). Also, the original recipe calls for 3 cups of corn but I don't like corn so I replaced it with black beans (definitely different, I know, but sue me).
2-ounces chopped green chilies, canned
2-ounces chopped chipotle chilies, canned
1/2 cup yellow onion, chopped
4 tblsp butter
2 cans black beans, drained and rinsed
1/2 cup chicken stock
1 1/2 cups milk
3-ounces sour cream, at room temperature
1 pound imitation crab
salt and pepper to taste
Garnish:
1/4 cup goat cheese
2 tablespoons fresh chives, chopped
Recipe
(Note: Sour cream needs to be pulled out of refrigerator ahead of time)
Saute the onion, green chilies and chipotle chilies in butter over medium heat for five minutes. Add the black beans,chicken stock, and milk and bring slowly to a boil. Reduce heat and simmer for five minutes, stirring frequently. Remove from heat and stir in sour cream and blue crab. Salt and pepper to taste and serve immediately. Garnish bowls with goat cheese and chopped chives.
