    Thai Chicken Coconut Soup (tom kha gai)

    I wasn't happy with my last recipe for this, so I'm going to try a new variation. This is based on the YouTube video below, although I have changed the proportions of broth to coconut milk significantly (the original recipe calls for 6 cups of broth to 1 cup of coconut milk)

    List of Ingredients




    3 cups of chicken broth
    1/2 chicken breast, cut into bite-sized pieces
    handful of cilantro, chopped (stems separate from leaves)
    6 mushrooms, chopped
    1 stalk lemon grass, chopped
    4 green onions, chopped
    5 thai chilis, chopped
    kaffir lime leaves (about 5 leaves)
    Galangal root (2 inch piece, chopped)
    1 lemon
    2 cans of coconut milk
    fish sauce to taste
    chili paste oil to taste

    Recipe



    1. Boil cilantro stems, lemon grass, galangal, and kaffir in broth.

    2. When boiling, add chicken.

    3. When chicken is cooked, reduce heat and add fish sauce, chili oil, chilis, and mushrooms.

    4. Stir in coconut milk.

    5. Stir in cilantro and green onions.

    Serve with red pepper flakes.
