    This is a good variation of a traditional dish. I use cashews instead of pine nuts because they're much cheaper.

    List of Ingredients




    2 cups fresh basil leaves
    1/2 cup grated Parmesan or Romano
    1/2 cup grated cheese (any kind you have in the fridge)
    1/2 cup cashews (or pine nuts, if cheap)
    4 garlic cloves, chopped
    1/4 teaspoon salt
    1/2 cup olive oil (probably need a little more)

    Recipe



    Combine the basil, cheeses, nuts, garlic, and salt and grind until a paste is formed. Add the olive oil slowly and mix with the mashed basil mixture until well combined.

    Prepare pasta in boiling water and drain. Using a hot skillet, place pasta in skillet and add the pesto to the warm pasta. Stir the pesto into the pasta and serve.

    Note: If you have a huge crop of basil leaves and want to make a boatload of pesto sauce, you can fill an ice cube tray with it, then just pop out a couple of "cubes" when you want to make the pasta dish another time.
