    Watch out! These proportions may be off (for the reasons below) so don't try this recipe unless you're good at figuring things out! I was making saag paneer and had a whole bunch of pureed spinach left over so I decided to fry it into fritters. I THINK there was about the same amount as a 10-oz package of frozen spinach, but I may have been wrong about that. Also, I used about 1 cup of "protein powder" in mine, but it did absolutely nothing to harden the texture and had absolutely no effect on the texture or taste that I could discern. My fritters turned out great, but adjust accordingly.

    List of Ingredients




    1 package frozen spinach, thawed
    1/2 cup matzah meal
    2 eggs
    1/2 large onion, finely diced
    1/2 cup matzah meal
    1/2 tsp salt (may need more)
    1/4 cup peanut oil
    Served with sour cream

    Recipe



    1. Press all moisture from spinach. Work it.

    2. Mix all ingredients (except oil) until uniform. Refrigerate for 30 minutes.

    3. Heat oil in frying pain at medium. Spoon clumps of mixture (2 to 3 inches in diameter) into frying pan so they're not touching, press gently until they're circles.

    4. Fry until brown on bottom, about 3 to 5 minutes. Flip, fry the other side until brown on bottom, about 2 to 4 minutes. Remove and place on paper towels to absorb excess oil.

    Serve with sour cream.
