Put a Heart next to this recipe -- it's so low on cholesterol, saturated fats and sodium, it's earned one! And the color of this desert is so beautiful -- make sure you use clear dishes to set it off.
List of Ingredients
1 1-lb. can water-packed pitted Tart Red Pie Cherries
Cold Water
1 Tbsp. Cornstarch
Dash of Salt
1 Tbsp. Lemon Juice
10 pkts of Equal
4 drops of Red Food Coloring
1 pint Fresh whole Strawberries
Low-calorie Sour Cream as an optional garnishRecipe
Hull and core strawberries and cut into cherry-sized pieces. Drain Cherries, reserving liquid. Add water to cherry juice to make 1-1/2 cups.
Blend together cornstarch, salt and cherry juice mixture. Cook, stirring constantly, till thickened and bubbly. Add lemon juice, food coloring and Equal. Stir in cherries and strawberries. Chill.
To serve, ladle into clear dishes and top with a dollop of sour cream.
