    Cilantro-Lime Spread & a yummy pita pocket sandwich to put it in!! (I served this to my company for lunch yesterday -- had to do something quick 'cause I was in the middle of one of my big cooking afternoons). (Also makes a great dip for corn/tortilla chips or veggies)

    List of Ingredients




    1 (12-ounce) package Mori-Nu silken-style Firm Tofu
    Juice of 1 fresh lime, or about 2 - 3 tablespoons
    1 cup loosely packed fresh cilantro leaves
    1 teaspoon onion powder
    1 clove garlic
    1/2 teaspoon salt or to taste

    Recipe



    In a blender, blend the tofu and lime juice until very smooth and creamy. Add the remaining ingredients and blend until cilantro is finely chopped. Refrigerate until serving time.

    4 whole wheat pitas, cut in half crosswise
    Cilantro-Lime Spread (see recipe above)
    3 avocados, peeled and sliced
    2 - 3 tomatoes sliced
    1 red sweet pepper, sliced
    1 medium onion, sliced
    Optional - sliced light or soy cheese
    Spicy Sprouts, or preferred sprout mixture

    Cut pitas in half crosswise. Spread inside generously with Cilantro-Lime Spread. Fill with sliced avocados, tomatoes, red sweet pepper and onions and, if desired, a slice of cheese. Top with a sprinkling of sprouts. Hold sandwich with two hands and have at it!!
