Recipe Introduction
Hello Chef and Everyone Else out there,
It's Louise here from Coffs Harbour, on the wonderful north coast of
New South Wales, Australia. Our Autumn has just started here and we
are still having lovely warm days and refreshing cool nights... it's
a great time of year here.
This recipe is named in honour of my Aunt as it's really her
speciality. It certainly fits the delicious category and I think
healthy because it certainly makes you feel good when you eat it!
Hope you all enjoy it as well.
List of Ingredients
600g fresh ricotta cheese
1/2 teaspoon sambal oeleck (crushed chillies is fine)
6 sun dried tomatoes in oil, finely chopped
8 cloves garlic, crushed
good quality olive oil
1 teaspoon fresh thyme, chopped Recipe
Place half the cheese in base of a 20cm shallow ovenproof dish and pat
down. Scatter the sun dried tomatoes, sambal oeleck and half the
thyme and garlic evenly over cheese. Cover this with the rest of the
cheese and spread over remaining thyme and garlic. Drizzle with olive
oil. Place in a pre-heated 180C oven for about an hour, or till top
is golden. Serve with crusty bread or crackers for a delicious nibble
with a glass of chilled white wine, and enjoy!
