Recipe Introduction
Just finished making 8 - 9 quarts of this for the CHIP (Coronary Health Improvement Project) meeting tonight. Have to get back out to the kitchen soon -- still have several batches of hummus and 100 black bean patties to make!! It's been nice to visit briefly, I've missed CNC!!
List of Ingredients
3 cups tomato juice -- (low-sodium, if preferred)
1 (15-ounce) can great northern beans -- drained and rinsed
1 1/2 cups diced tomatoes
1 cup diced cucumbers
1 cup diced green bell pepper
1 cup sliced green onions
1/2 cup chopped celery
2 tablespoons minced fresh parsley -- (or 2 teaspoons dried parsley)
2 teaspoons dried basil
1 teaspoon dried oregano
2 tablespoons vinegar -- or lemon juice
2 cloves minced garlic -- (about 1 teaspoon)
1/2 teaspoon sugar -- (optional)
1/2 teaspoon olive oil -- (optional)
Recipe
In a large bowl, combine all the ingredients. Taste and adjust seasoning, if necessary. Refrigerate for several hours or overnight before serving. Serve chilled.

NOTES : If desired, before adding beans, remove half the tomato and vegetable mixture and puree in the blende; then return to mixing bowl and stir in beans.
