    Calamari with Garlic Mayonnaise

    This is good stuff. Hey, if you've never tried calamari before, give it a go! It's actually quite good, and rather inexpensive as far as seafood goes. Bet you'll be surprised.

    List of Ingredients




    2/3 cup mayonnaise
    2 large garlic cloves, pressed
    1/4 cup olive oil

    1 cup all purpose flour
    1/2 cup yellow cornmeal
    2 Tbsp chili powder
    4 tsp cayenne pepper
    1 Tbsp salt
    1 quart peanut oil (for deep frying)
    1/2 pound cleaned calamari (squid) cut lenghthwise into 2 inch long, 1/2 inch wide strips

    Combine mayonnaise and garlic in small bowl. Gradually whisk in olive oil. Season to taste with salt and pepper. (Mayonnaise can be prepared 1 day ahead. Cover and refrigerate.)

    Mix flour, yellow cornmeal, chili powder, cayenne pepper and salt in a large bowl. Heat peanut oil in heavy large saucepan to 400 degrees F. Working in small batches, coat calamari with flour mixture, shake off excess and fry in oil until crisp, about 1 minute. Using slotted spoon, transfer to paper towels and drain. Serve with garlic mayonnaise.
