    Fiesta Shrimp Appetizers

    ( low fat )

    List of Ingredients




    2 lbs fresh or frozen large shrimp in shells
    2 cloves garlic, minced
    1/2 tsp finely shredded lime peel
    1/4 cup lime juice
    2 Tbsp olive oil
    2 Tblsp finely chopped green onion
    1/4 cup chopped fresh Anaheim pepper
    1 - 2 Tbsp snipped cilantro or parsley
    1/2 tsp sugar
    1/2 tsp salt
    1/4 tsp pepper
    lettuce leaves ( optional )
    1 medium papaya and or mango peeled, seeded and sliced ( optional )

    Recipe



    1. Thaw shrimp if froze, peel and devein.
    2. In a medium saucepan bring 4 cups water to a boil. Add shrimp and simmer uncovered for 1-3 minutes or till shrimp turn pink, stirring occasionally.
    3. Rinse under cold running water, drain and set aside.
    4. In a heavy plastic bag set in a medium bowl, combine garlic, lime peel, lime juice, olive oil, onion, Anaheim pepper, cilantro or parsley, sugar salt and pepper, mixing well.
    5. Place cooked shrimp in the bag. Turn bag to coat shrimp with marinade mixture, and marinate in refrigerator for 2-3 hours, turning occasionally
    6. To serve, drain the shrimp, discarding the marinade.
    7. If desired, arrange papay or mango slices around the outer edge of a lettuce-lined serving platter, placing the shrimp in center of platter.
