Tomato & Mozzarella Toasts

Recipe Introduction
(sfilatino or ciabatta is a very thin Italian bread,. If you can't find it, you can use French bread or baquettes instead.)
List of Ingredients
3 sfilatino (thin ciabatta)
about 1 cup sun-dried tomato sauce
3 (5 oz.) packages mozarella cheese, drained
about 2 tsp. dried oregano or mixed Italian herbs
2 -3 3 Tbsp. olive oil
freshly ground black pepper Recipe
(Variations: Use red or green pesto instead of sundried tomato paste - a combination of colors is especially effective if the toasts are served on a large platter. Halved olives or criss-crossed strips of anchovy can be pressed into the cheese.)
Cut each bread loaf on the diagonal into 12-15 slices, discarding the ends. Toast lightly on both sides. Predeat oven to 425 and spread tomato paste on one side of each slice of toast. Cut mozzarella into small pieces and arrange over paste. Put toasts on baking sheets, sprinkle with herbs and pepper to taste and drizzle with oil. Bake for 5 minutes or until the mozzarella has melted and is bubbling. Let the toasts settle for a few minutes before serving.
