Hello from Vermont,
Vegan guests were arriving for a ski week-end and I had no clue what
food to fix for them. I researched this whole new realm, we had a fun
time and to my knowledge no one went away hungry. This recipe
remains, long after the guests have returned home... it's healthy,
quick, easy, and yummy good for breakfast (or dessert). I have
adapted it to my tastes from the original version of which I did not
write down the source. My apologies to the creator of it.
List of Ingredients
1/2 cup white basmati rice
1/2 tsp nutmeg
1 tsp. cardamom
1 tsp. coriander
1-1/2 tsp. oil (I use olive oil)
1 cup water
1 tsp maple syrup (more if you like it sweeter)
1 tsp vanilla
1 tsp. currants, raisins, or dates
1 Tbs. chopped pecans or slivered almonds
1 tsp. toasted sunflower seeds Recipe
Combine rice, nutmeg, cardamom, and coriander in pan with oil. Saute
until rice smells nutty. Add rest of ingredients, cover and cook
approximately 15 minutes or until water is absorbed and rice is
tender. I serve mine with soy milk. This recipe is for one serving.
Easy to increase for additional people.
