    List of Ingredients




    3 c. shredded zucchini (I don't peel them) Carrots, corn other possibilities

    3/4. parmesan cheese

    3/4-1c. Bisquick

    1 egg

    1 clove garlic, crushed

    1 tbls. parsley

    1/2 tsp. salt

    pepper to taste

    Recipe





    Mix all ingreds. Fry in oil using 1/4 measuring cup. Cook until golden brown on both

    sides. (I like them a little crispy around the edges).

    Top with shredded cheddar and/or sour cream

    In Response To: Donna's recipe...I love these (Sherry in Roseburg)

    used some carrots. I want people to be aware that when I was making them, it looked like there wasn't going to me enough liquid to bind them together. I had the all ihe ingredients blended but still had to add the zucchini and carrots.

    Once I added the zucchini, that provided enough moisture to bind everything together. They turned out very well.

    I made these for just DH and I and had a few left over. I froze them and just this past weekend used them as appetizers for company! I cut them into smaller pieces, reheated them in the microwave, and put cocktail toothpicks in them. Then I served them with sour cream and the spicy red pepper dip we like.

    Both couples we invited for dinner wanted the recipe for these "appetizers". I didn't tell them they were eating my leftovers. (But next time, I WILL make them in small 1/2 dollar size specifically for appetizers.)
