    Charelle, As I was filing some recipe clippings, I came across this one which reminded me of you.... (Now, if my memory is playing tricks on me, and it was NOT cashew butter you were fond of, forgive me)!

    List of Ingredients




    3/4 cup cashew butter
    1/2 cup unsalted butter, softened
    1 1/4 cups packed light brown sugar
    1 large egg
    1 teaspoon vanilla extract
    1 1/2 cups unbleached all-pupose flour
    1 teaspoon baking soda
    1/4 teaspoon salt
    1 cup chopped, roasted cashews
    About 30 Hershey's Kisses chocolates

    Preheat oven to 350 degrees F and grease 2 cookie sheets. Cream the cashew butter, butter, and brown sugar. Beat in the egg and vanilla until smooth. Sift flour, baking soda, and salt, and stir into the creamed mixture. Fold in the choppped cashews. Unwrap the Hershey's Kisses chocolates. With floured hands, roll the dough into 1 1/2-inch balls; leave room between them on the sheets. Bake for 15 to 17 minutes, until the tops are gently rounded and still soft to the touch. As the cookies come out of the oven, firmly press a Hershey's Kisses chocolate into the center of each one. Cool on the sheet for 5 minutes, then transfer to a rack and cool.

    Makes about 2 1/2 dozen.
