I just posted a recipe for the pecan pie bars at the TOH board but thought I would put it here also.
I make them in place of pecan pie often.
List of Ingredients
1 18-1/2 oz. pkg yellow cake mix, divided
1/2 cup buter or margarine, melted
1 egg
1 tsp. vanilla, butter and nut flavor extract
2/3 cup reserved cake mix
1/2 cup firmly packed brown sugar
1 1/2 cups dark corn syrup
2 tsps. vanilla, butter & nut flavor extract
3 eggs
1 cup chopped pecans
Recipe
Grease bottom and sides of 13x9-inch pan. Reserve 2/3 cup dry cake mix for filling. In large mixing bowl, combine remaining dry mix, butter, 1 egg, and vanilla/butter/nut extract. Mix until smooth. Press evenly into bottom and sides of prepared pan. Bake at 350 deg. for 15 to 20 minutes or until light golden brown.
Meanwhile, combine reserved cake mix, brown sugar, syrup, vanilla, butter & nut flavor extract and 3 eggs in large mixing bowl. Beat at medium speed for 1 to 2 minutes. Pour filling over baked crust. Sprinkle with chopped pecans. Return to oven and bake for 30-35 minutes until filling is set. Cool. Cut into bars. Makes 36 bars.
