    - I use normal oil.
    - use half rec for 1 layer only (abit thin)
    - good on its own too

    List of Ingredients




    500 grams ripe bananas
    4 eggs
    1 1/3 cups castor sugar
    1 cup grape seed oil
    2 3/4 cups self raising flour
    1 tsp bi-carb of soda

    Recipe



    Preheat oven to 160 degrees celsius
    Mash bananas, then add eggs and mash well.
    Add sugar, oil, flour and soda - mix with a hand blender.
    Divide mix and bake in 2 greased round cake tines for 50 minutes. Sit for
    ten minutes then invert.
    Put one cake on a plate, flat side down. Top with whipped cream. Place full
    bananas in concentric circles on top of cream, then fill in gaps with more
    whipped cream. Place other cake on top. Cover cake top and sides with
    whipped cream and sprinkle with toasted coconut.

    I haven't baked this cake for AGES, but it was always a favourite, however,
    I seem to remember I MAY have had to cook it for longer than this recipe
    says. I could be wrong, but I just thought I'd warn you...
