    My very favorite (although not a traditional two crust pie) is this Nathalie Dupree recipe and it couldn't be easier:

    List of Ingredients




    3/4 c sugar
    1/2 c flour
    1 unbaked 9" pie shell
    2 c sliced fresh or frozen peaches (defrosted)
    1 c heavy cream

    Recipe



    oven 350

    Mix sugar and flour and sprinkle one-third of the mixture into the bottom of the crust lined pie pan. Add the peaches and sprinkle with the rest of the sugar/flour mix. Pour heavy cream over the top and move the peaches around a bit with a fork so that the cream completely covers all the slices.

    Bake 45 minutes. Serve warm or room temperature.
