    Recipe Introduction


    Hi Ya'll,

    This is my second submission to this ezine. I live with my three Old
    English Sheepdogs in Sachse, TX (just northeast of Dallas & Garland).
    I began making this delicious dish many years ago. It is a unique
    twist on the traditional tuna fish casserole. I don't remember where
    I originally obtained this recipe (sadly).

    List of Ingredients




    2 cn 6.5 oz Chunk-style tuna
    2 t Dried mustard
    6 oz (3c) uncooked egg noodles
    1/2 c Mayonnaise
    1/2 c Chopped celery
    1/2 t Salt
    1/3 c Sliced green onions*
    1 or 2 sm Zucchini, scrubbed, sliced
    2/3 c Dairy sour cream*
    1 c Shredded Monterey Jack Cheese
    1/2 t Dried thyme leaves*
    1 md Tomato, chopped

    * indicates substitutions that I have made.
    - Used chopped cooking onions instead of green onions
    - Reduced or no fat sour cream for regular
    - Cheddar and/or Swiss cheese for Monterey Jack Cheese
    - 1 teaspoon of dried thyme

    Recipe



    Drain and flake the tuna. Set aside. Cook noodles according to
    package directions. Drain and rinse in hot water. Combine noodles
    with the tuna, celery and green onions. Blend in the sour cream,
    mustard, mayonnaise, thyme and salt. Spoon half the mixture into a
    buttered 2-quart casserole. Top with half of the zucchini. Repeat
    the layers. Top with the shredded cheese. Bake at 350 F for 30
    minutes, or until hot and bubbly. Sprinkle with the chopped tomato
    and serve.

    Note: I serve the tomatoes on the side. This works better for warming
    up leftovers.

    Tips: You may substitute canned, drained and flake salmon for the
    tuna. You may also add some chopped fresh parsley, dill, basil, or
    chives to the casserole.

    Microwave Instructions:

    Prepare casserole as for the oven up to adding the cheese. Don't put
    the cheese on. Instead, cover the casserole and microwave on HIGH for
    6 to 8 minutes. Now top with the cheese and tomato. Microwave on
    HIGH for 2 minutes longer. Let stand for 3 minutes before serving.
