Key Lime Cookie Coolers

Jen, I used bottled key lime juice to make these cookies - they were elegant and delicious. Perfect for afternoon tea or a bridal shower...very refreshing little cookies.
List of Ingredients
1/2 cup butter -- or margarine
1 cup granulated sugar
1 egg -- + one yolk
1 teaspoon baking powder
1 1/2 cups all-purpose flour
1 teaspoon salt
1/4 cup fresh/bottled lime juice
1 1/2 teaspoons lime zest -- zest only
1/2 cup confectioner's sugar -- for dusting
Recipe
Preheat oven to 350 degrees F (180 degrees C). Grease cookie sheets.
In a large bowl, mix butter, sugar, egg and egg yolk until creamy. Mix in the flour, baking powder, and salt. Add lime juice and lime zest.
Form dough into 1/2 inch balls. Place on prepared cookie sheet and bake until lightly browned, 8 to 10 minutes.
Remove to wire rack. While still warm, sift confectioners sugar over cookies. Makes 3 dozen
