    5 egg yolks
    5 whole eggs
    1/2 cup + 2 Tbl. sugar
    5 egg whites
    1/4 cup sugar
    1/2 cup flour
    1/2 cup + 2 Tbl. cocoa powder
    1 oz. water
    1/4 cup sugar
    2 whole eggs
    1 egg yolk
    3 oz. semi sweet chocolate
    1 oz. unsalted butter
    7 oz. whipped cream
    2 oz. milk
    1 vanilla bean
    2 Tbl. sugar
    1 egg yolk
    3 1/2 oz. white chocolate
    6 oz. whipped cream

    To make cake, whisk in a mixer 5 egg yolks, 5 whole eggs and 1/2 cup plus 2 Tbl. sugar together until thick. Set aside and whisk 5 egg whites and 1/4 cup sugar. Fold into yolk mixture. Add flour and cocoa powder. Put in cake pans and bake at 400 degrees for 10 minutes.
    To make chocolate mousse, melt chocolate and butter together. Whisk in a mixer 2 whole eggs and 1 egg yolk. Cook water and 1/4 cup sugar until sugar dissolves. Pour into mixer with eggs. Add in chocolate, then whipped cream. Mix well.

    To make white chocolate cream, boil milk with sliced vanilla bean. Mix 2 Tbl. sugar and 1 egg yolk. Add to melted white chocolate. Add milk and vanilla bean and combine with 6 oz. whipped cream.

    To assemble, use an 8" cake ring as mold to cut the cake into round pieces. Cover first layer of cake with chocolate mousse. Then add another layer of cake and cover with white chocolate cream. Add a third layer of cake and cover with chocolate mousse. Smooth off the top and put in freezer for at least 2 hours.

    To make the glaze, boil 9 oz. cream with 1 Tbl. honey. Pour over 7 oz. semi sweet chocolate and stir until chocolate melts. Pour over the cake. Serves 8.

    this is not T &T but was on our news channel yesterday and looked VERY good. Is from a great restaurant (if not expensive!) in the Seattle area.
