Recipe Introduction
Hi all. This is Roni from New Jersey. Happily married for 20 years,
and mother to a 15 year old two legged daughter and a 3 year old
golden retriever. We area hopeful that the 3 year old will become a
mother sometime in the next few months. This will be a new experience
for us, so any tips on how to best survive a litter of puppies will be
appreciated.
Here in New Jersey blueberries are abundant throughout a good part of
the summer. This recipe was given to me by a neighbor in New York
(Thank you Mary) when I was barely tall enough to reach the oven. It
remains a favorite many years later.
List of Ingredients
Blueberry Coffee Cake
Mix together thoroughly:
3/4 cup sugar
1/4 cup soft shortening
1 egg
1/2 cup milk
Sift together and stir in:
2 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon salt (can use a little less)
Blend in:
2 cups blueberries, washed and picked through
Spread batter in a greased and floured cake pan (I use an 8" by 8"
square pan. A 9" by 9" pan or any similar size would work fine as
well - watch the baking time.) Sprinkle with topping (see below) Bake
in a 375 degree oven for 25-35 minutes, until a toothpick comes out
clean. Serve warm or room temperature.
Crumb Mixture Topping for Blueberry Coffee Cake
Mix together:
1/2 cup sugar
1/3 cup sifted flour
1/2 teaspoon cinnamon
1/4 cup soft butter. Recipe
