    Wayne's Best Ever Strawberry Cake

    Recipe Introduction


    This recipe is really good and great this time of year with fresh strawberries.

    List of Ingredients




    1 box white cake mix
    1 3 oz. box strawberry gelatin
    1 cup cooking oil (sorry I forgot to add that I only use 1/2 cup of oil)
    1/2 cup milk

    4 eggs
    1 cup fresh or frozen strawberries
    1 cup each coconut & pecans

    Recipe



    Blend together cake mix and gelatin. Add oil and milk and
    beat; add eggs, one at a time. Beat again until eggs are well
    blended. Fold into the batter: berries, coconut and pecans. Pour
    into three cake pans, greased and dusted with flour. (May bake in
    9 x13 pan) Bake at 3500 for 30-35 minutes. Store in cool place or
    refrigerator. Cake will keep two weeks or more.

    Strawberry Icing

    1 box powdered sugar
    1 stick butter, melted
    1/2 cup pecans
    1/2 cup drained strawberries (may need a little juice)
    1/2 cup coconut

    Mix together and ice cake layers when coal. A good cake to serve at a party - large servings are not needed as the icing is very rich.
