CHICKEN CUTLET PARMESAN

List of Ingredients
2 eggs
1/4 cup milk
2 cups breadcrumbs
3-4 tablespoons olive oil
6 skinless and boneless chicken breast halves, pounded flat
1 1/2 cups tomato sauce, preferably homemade
1 pound whole-milk mozzarella, shredded
Grated Parmesan cheese Recipe
In a shallow bowl, whisk the eggs and milk together until they are foamy. Put the breadcrumbs in another bowl. Heat the oil in a large skillet. Preheat the oven to 350 degrees.
Dip the cutlets into the egg mixture and then into breadcrumbs. Fry in hot oil until golden brown on both sides, and drain on paper towels.
When all the cutlets are done, place them in a shallow baking pan. Cover with tomato sauce and mozzarella cheese. Bake in the 350-degree oven until the cheese is melted. When you take it out, sprinkle with grated Parmesan. Serve with broccoli rabe that you've braised with garlic and chicken broth.
