Recipe Introduction
Hi I'm Shawn, I've been a graphic designer for 16 years and have in
the last 6 years moved into knitwear design. I'm the home schooling
mom of three and run my design studio from my home. I've lived on
three continents and love travel but I've slowed down a bit to enjoy
family life! Here is my family's favorite one dish meal. Foil
packets make cleanup easy, and you can serve as many as you like by
making more packets. I use 3 leg quarters and divide veggie portions
into thirds instead of halves for the kids, so a doubled recipe feeds
all 5 of us.
List of Ingredients
1 chicken split in half
1 large onion, sliced into rings
1 bell pepper, sliced in strips
12 'new' potatoes (the little ones)
2 carrots, sliced into chunks
2 ears corn on the cob, cut in half
1 tomato cut into eighths
Cajun style seasoning mix to taste Recipe
Using heavy duty or a double thickness of regular aluminum foil pull
out a sheet large enough to wrap the chicken with 4 inches extra.
Place 1/2 chicken on center of foil sheet. Arrange 2 corn halves, 6
potatoes, and 1/2 the carrots around. Top with 1/2 of the onion, bell
pepper and tomato. Sprinkle with seasoning mix. Fold packet.* Repeat
for second chicken half. Place on baking sheet and bake at 350 for 1
hour. Place packet on plate, carefully slice into the top of the foil
to release steam. Serve in packet.
*Folding Packet: bring long ends up to meet over top. Fold ends
together with 1/2 inch fold. Fold down twice more. Fold left side
ends together, repeat for right side.
