    Recipe Introduction


    This is a great tasting and easy to make Jambalaya. If I don't have
    leftover turkey, I just microwave a couple of chicken breasts and use
    those. I've also thrown in other vegetables, as are in my
    refrigerator. For those of you on Weight Watchers (I am a lifetime
    member but would love any recipes you have - weight is always a
    battle!) this is 4 POINTS. Great heated up the next day for lunch
    too. Pat (from Buffalo Grove, IL - married 21 years - 12 year old
    boy/girl twins - own my own business - volunteer extraordinaire!)

    List of Ingredients




    1 tablespoon olive oil
    1 1/2 cups onion -- chopped
    1 teaspoon minced garlic -- bottled
    2 1/2 teaspoons paprika
    1/2 teaspoon salt
    1/2 teaspoon dried oregano
    1/2 teaspoon ground red pepper
    1/2 teaspoon black pepper
    1 cup long-grain rice -- uncooked
    2 cups chicken broth
    1 can diced tomatoes -- undrained
    2 cups cooked turkey -- shredded
    6 ounces turkey sausage -- hot
    2 tablespoons green onions -- sliced

    Recipe



    Heat oil in a large Dutch oven over medium high heat. Add onion and
    garlic, saute 6 minutes or until lightly browned. Stir in next 5
    ingredients (through black pepper); saute 1 minute. Add rice, saute 1
    minute. Stir in broth and tomatoes; bring to a boil. Cover, reduce
    heat and summer 15 minutes. Add turkey and sausage. Cover and cook 5
    minutes. Sprinkle with green onions. Serving size - 1 cup. Can also
    add 1 cup each of green and red bell peppers.

    Serving Size: 8
